This was day one of my new juicing Paleo diet. Going without
bread wasn’t as hard as I’d feared. For breakfast I tried juicing. I was just
getting into fruit/veggie juicing when I left Anaheim almost 2 years ago, but I
never got back around to it. My daughter and her hubs had great success with it
so I was inspired to give it another go. </div>
<div class="MsoNormal">
Unfortunately I tried to whip together a concoction quickly because
we were leaving for the Farmer’s Market in Apple Valley. Since I couldn’t get
the frozen apricots apart, I just tossed a big glob into the blender. Then I
added frozen apples and a small zucchini and about a cup of apple juice. I
poured it into a cup, grabbed a spoon and hopped into the car. Unfortunately it
came out the texture of apricot baby food. It probably would have been
delightful over vanilla ice cream, but I pretty much had to gag it down because
it was so tart. All I could taste was apricots! I hated throwing half of it
away. It would have been much better to pour it into ice cube trays and use it
for the next batch of juice. And I need to freeze tiny batches of fruit so this
glob problem doesn’t happen again. </div>

I did bum 3 French fries off my boyfriend at lunch. <span style="mso-spacerun: yes;"> </span>I had a chef salad. I forgot I wasn’t supposed
to have cheese though. I haven’t ordered the books yet so I’m easing my way
into it. </div>

Normally I have hummus with chips, but I decided to try
celery instead. I actually liked it better! More refreshing. I know you aren’t
supposed to have beans on the Paleo diet, but better to skip the chips and keep
the beans than the other way around. Plus beans are high in fiber. I almost
caved when my boyfriend opened a bag of Fritos (one of my favorite snacks) but
I was full from the hummus (thank goodness). </div>

I kept dinner simple. I just don’t get that hungry after a
day that was 113 degrees! My boyfriend had made a chicken in the rotisserie so
I had that and now I’m having cherries. Yum. I was never hungry today.<span style="mso-spacerun: yes;"> </span>So day one was pretty much a success.</div>

I've never made any and I wanted to take it to a Christmas potluck. Then I lost my nerve and ended up taking a recipe my boyfriend already had ready. I was afraid people would freak out when they saw yam soup. I'm glad I didn't take it because there was way too much food and it wouldn't have gotten a fair chance.
But I have all the ingredients so I'm making it right now.

I found the recipe on Pinterest. The only thing I changed was to use only one big yam, and add in 3 carrots in place of the other yam. I used 2 cans of vegetable broth as well.

The only thing that seems impossible to me is the 10 min. prep time. Last year I discovered mincemeat at Winco. It's seasonal, so I was sad that I couldn't get any more. Now they have it again! So I got 2 cups of it and made mincemeat cookies. I thought there would be a mincemeat cookie recipe on their site but there wasn't. So I got a recipe on line, and they are so delicious. So I made the dough in the bread machine, which takes about 2 hours. Then it was time to figure out what to put on it. We ended up using black olives, shallots, anchovies, spicy dried salami, cheddar cheese, Parmesan cheese, and roasted garlic. Yummy! And the recipe makes enough dough for 2 pizzas, so tomorrow night we'll have something different on top.<br />
<br />
To make the sauce, I use one can of tomato paste, about 1/4 cup of water, and a teaspoon of olive oil all mixed together. I use half for the first pizza, and save the rest for tomorrow's pizza. Nom nom. It sure was good. Pizzas are a great way to use up leftover bits of this and that. <br />

For our 4th of July potluck, my boyfriend made the most awesome chili (no beans) as well as fresh salsa. I roasted the peppers for the salsa and peeled half of them. He did everything else. People were standing in line waiting for the chili to heat up at the pot luck. Many of them used it to make a chili dog. He got lots of compliments on the salsa as well. Nothing beats fresh. And I never really think of salsa as a vegetarian food, but it kept the vegetarians happy too.<br />

No acid reflux or any other nasty side effects. So Yay.<br />

For today I used a red pear, half a cucumber, poppy seeds, sesame seeds, red cabbage, 1/2 cup spring water, and a handful of cilantro. It was okay but it didn't rock my world. I put some ice cubes in because I find they taste better cold. As I was putting the tray back, I spotted some frozen strawberries long ago forgotten in the freezer. I defrosted them for 1 minute in the microwave and tossed them in. Wowsa, what a difference. This was like a treat I'd pay big bucks for at a street fair.<br />
<br />
In the past when I've done fruit smoothies I used apple or orange juice. Then I got acid reflux. Also, store bought juices are full of other crap like added corn syrup. Now that I'm using water as my liquid, and a balance of veggies and fruits, I'm hoping to avoid the acid reflux issues. I will say between this and my usual breakfast, I wasn't hungry for lunch until about 4 o'clock.<br />

Adding the frozen strawberries gave me an idea. I toss out tons of fruit that gets too ripe before I can eat it. So I'm going to start freezing all my left over fruit (particularly bananas), so I always have a bit of frozen stuff to keep my smoothy cold enough. This is going to save me all kinds of money. And since I added the strawberries today I had almost 3/4 of the smoothy left over, so that goes in the freezer too as a base for tomorrow's smoothy. That will save time on chopping up things. <br />

Tomorrow is the 4th of July so today I'll be roasting peppers for the chili my boyfriend is making for our 4th of July potluck. How to bake bacon:<br />
1. Get a baking sheet and cover with parchment paper. The paper with absorb some of the grease.<br />
2. Lay out bacon in a single layer.<br />
3. Heat over to 350 degrees.<br />
4. Put bacon in oven and set a timer for 20 minutes.<br />
5. Check to see if it's done when the timer goes off, and if not, leave it in for another few minutes.<br />
6. Drain on paper towels.<br />
7. Turn off oven.<br />
8. CA is there are a lot of ethnic markets here. Today we went to a Korean market up on Beach Bl. and they had an amazing collection of sprouts. The ones I can remember are radish, beans, and alfalfa. I like sprouts on sandwiches and in salads but I have the seeds at home to grow my own.<br />

I'll have to remember to take my camera next time to show you the shop sign, but it's called <a href="http://www.hannamchain.com/home.php?siteID=6" target="_blank">Han Nam Chain Super 1 Mart</a>. It's our favorite place to go to get kimchee, fish oil, and things like red pepper paste. They also have food samples, and freshly cooked food ready to go. One of the bread books has me thinking about baking bread again soon. My main problem with bread is my boyfriend barely eats it and I don't need to get any fatter than I already am. So if I'm going to bake some, I need more friends in real life to share it with. I need to get in the habit of baking for pot lucks or to take to SCA events or to take to friends and relatives. Then the group of us can have a muffin or two and I don't end up eating a whole loaf of bread or 2 dozen cupcakes. The most bizarre recipe in one book is Bacon and Peanut Butter Muffins. I may make that just out of curiosity. But I am willing to try to make a new sourdough starter or some tofu bread or sopaipillas or onion crescent rolls. It was such a funny name and yet I knew exactly what she meant. Since I heard Richard Simmons saying he lost weight by adding 2 more servings of vegetables to his diet each day, I was looking for a way to do the same. So I had to try this soup thing. I was a bit discouraged when my boyfriend said he just wasn't into vegetable soup so I'd be on my own. But I plowed ahead anyway. He has some powdered chicken stock he let me use. So I used 4 tbsp. of that in 12 cups of water of boiling water. Then I added chopped carrots and 2 handfuls of lentils first to get a head start while I chopped everything else. Next I added chopped cilantro, zucchini, celery, a yellow bell pepper, button mushrooms, brocolli and snow peas. I added some ground tomatillo, onion salt, parsley flakes and season salt. I let the whole thing simmer for about two hours. Once the carrots were tender, I served it up. I put some fresh ground black pepper on top and a bit of fresh cilantro.</b><br />

<b>It was so delicious! And I felt good because the veggies went into my tummy instead of into the trash can like they usually do. I never saw my boyfriend try any, but he said he liked it. In fact it was his idea to add it to my food blog.</b><br />

I got two different types of apples for a better flavor. It's rather like peach cobbler I think, only with apples. I got the idea from America's Test Kitchen, but their recipes are always too complicated, so I went with the easy way instead. In their version you have to make a pie crust. Not that that's so horrible, it's just that my kitchen is tiny and rolling out dough isn't fun. I believe I got granny smith and braeburn. According to the <a href="http://www.foodsubs.com/Apples.html">Cooks Thesaurus</a> I actually made a good choice completely at random.<br />

So I decided to make pizza for lunch. Using the wheat pizza dough I made in the bread machine a few days ago, I put together a pizza from items on hand.<br />

Pizzas are a great way to use up bits of meat, cheese and veggies. On mine I put fire roasted tomatoes in sauce, grilled onions, browned kielbasa sausage, shitake mushrooms sliced thinly, and medium grated cheddar cheese. I'd already added oregano to the dough.<br />

This dough was a lot stiffer than what I'm used to. Even though the recipe said it was enough dough for 2 large pizzas, I could only spread it out far enough to make one rectangular pizza. I had already used about 1/5 of the dough for breadsticks the other night. But still, there is no way that would have made 2 large pizzas, even with allowing the dough to relax several times.<br />
<br />
It made for a very hearty thick crust chewy pizza though. One and a half pieces were all I could eat. I couldn't find my usual recipe so I got one from another book I've been meaning to try. This one is half white and half wheat flour. I'll like it fine, but I'm not sure my boyfriend will like it.<br />
